In a medium bowl, combine sweet potatoes, Brussels sprouts, olive oil, salt and pepper. Mix well. Add to a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through. In a small bowl whisk together honey and mustard. Gradually pour in olive oil. Remove vegetables from oven and drizzle with honey mustard sauce.
