Aldo Zaninotto is the owner of Osteria Langhe, Testaccio, and Soif Wine Lounge in Chicago, Illinois. Inspired by his love of the Piedmont region of Italy, Zaninotto opened his first restaurant, Osteria Langhe, in 2014, followed several years later by Testaccio, an homage to its namesake Roman neighborhood. Most recent is @soifwine, a French speakeasy–inspired concept in the space below Testaccio, serving up a selection of grower Champagnes, hard-to-find French reserve bottles, and curated small bites. Zaninotto acts as wine director for all three restaurants, bringing value-driven labels of the highest quality to his establishments.
