BROWN BUTTER SAGE RIGATONI 🧈🍂🍷 I’m IN LOVE with this silky, creamy and nutty fall pasta. I made this for friends a few months back and that was the night Andrew discovered he was allergic to pecorino romano. It doesn’t stop him from eating it and if that doesn’t speak volumes I don’t know what will 😂 Just like most of my favorite dishes it’s simple yet delicious and only requires a handful of ingredients. Plus, it’s done in under 15 minutes! You’ve GOT to try it! Enjoy 🤍
What you’ll need:
1 pack of rigatoni
30-40 sage leaves
3-4 tbsp. butter
1 1/4 cup pecorino romano, freshly grated!!!
1/2 - 1 cup pasta water
Pinch of freshly grated nutmeg
Fresh cracked black pepper to taste
Additional pecorino romano for garnish
*Make sure to heavily salt your pasta water and cook al dente. Brown the butter and Sage on medium heat until it’s caramel colored and the Sage is begins to crisp. Lower heat and add your pasta, stir to combine. Add pasta water and cheese bit by bit + nutmeg and stir quickly to meld until the sauce thickens. Serve, garnish and enjoy!
