small veggies big taste — — This tart is a great example of “winging it.” I forgot I still had half of some pate brisee dough, and wanted to use it in a savory way. Did it shrink a bit in the oven because the oven temp was too low? sure. Did it matter when I ate it? not in the slightest. *Always chill your dough before baking or it’ll shrink!* The dough is a standard pie dough recipe, any you have or know will work for this. Truly, the real magic here is the savory cashew custard. I blanched all of the mini veggies in lemony/salty water for 30 seconds, and then shocked them in an ice water bath. The texture once baked was just perfect. — — cashew custard cream 1 1/2 cups raw cashews, soaked and drained 1 lemon, juice and zest 1 tsp white pepper 2 tbsp pickling liquid (whatever you have from capers, cucumber pickles, pickled fennel, etc) 2 tbsp olive oil 1 tbsp nutritional yeast 2 tbsp plant based milk of choice 1 garlic clove 2 tsp kosher salt — — To make custard: blend all ingredients in high powered blender. To prepare veggies for tart: make sure all veggies are similar in size, and blanch them in boiling salted water. (I also add the juice of an entire lemon to the water for added flavor) Blanch them for 30-60 seconds, and immediately strain into an ice bath. — — To prepare your tart, roll out your pie dough into tart pan of choice. (half of the dough in a standard pie dough recipe works great for an 7 inch tart pan) Once you’ve rolled out your dough in the tart pan, place in refrigerator to chill for 30 minutes. Take tart out of the fridge, prick holes in the bottom of the tart using a fork (this is called docking, and prevents air bubbles) then line the chilled pie crust with parchment paper. Fill with pie weights or dried beans if you don’t have pie weights and then blind bake tart for 15 minutes at 375. After partially baking, add in desired amount of cashew custard cream, blanched veggies of choice, and bake for another 20 minutes.
