Pietro’s Sicilian Lychees are here.
The natural red skin of the Kway May variety is a sign of true ripeness. Where most lychees are picked early and subject to up to five weeks of freighted transport, Pietro’s lychees are harvested fully ripe and with us within three days.
Once picked, lychees cannot ripen off the branch. The plump, sweet flesh that Pietro achieves is a different league to the rubbery, sugar deficient examples that are harvested underripe. Stored for weeks, lychees begin to oxidise and are widely fumigated using sulphur dioxide to combat the ensuing discolouration. Pietro leaves his lychees untreated, staying true to his belief in minimum intervention growing, both during and post-harvest.
It’s a short season for Sicilian Lychees; we expect them to last until the end of the month. Find them on the French and UK apps now and in all London stores.
