She speaks 🥲!!! Did it for the crazy water 🦑 Acqua Pazza / Fish in tomato broth with herbs 👋🏽
Serves two, ready in under one hour. I like to serve with sautéed bitter greens in garlic, olive oil + chilli. Soak up all of the juices with fresh bread or brush a little olive oil and salt on some chunky slices and bake in the oven... worth it, I promise !
What you need -
2ish tbsp extra virgin olive oil
2 garlic cloves , crushed
A pinch of dried chilli flakes
About 400g sweet cherry tomatoes
750ml water
A very good handful of fresh parsley
A good pinch of salt
2 fillets of fish (the fishmonger filleted Sea Bass for me... you don’t want the fillets to be too thick and they should be on the firm side)
1. Heat olive oil on medium heat in a pan large enough for all of the ingredients (higher edges), sautée garlic and chilli.
2. Add the tomatoes, let sizzle for a few minutes.
3. Pour in water. Mix through parsley and salt. Bring to boil and then take the temperature down to a simmer, stirring occasionally let the juices thicken and water reduce (about 35-40 minutes).
4. Gently add fish to the pan. They are ready when no longer translucent (timing will vary, pending size and thickness, today it took 15 minutes).
5. Carefully pick up the pieces when ready as they’re very delicate and serve with bread or sautéed greens. Generously spoon the juices over!
