Simit (Turkish Bagels) is what i bake when i miss my hometown 😌
Simit is a popular Turkish street food like sesame bagels.It has a crunchy exterior and light fluffy interior with a delightful nutty flavor.
Dough
1+1/4 cup (300 ml) luke-warm water
1 tbsp dried yeast
500 gr white bread flour
2 tsp salt
1/2 tsp sugar
Topping
1/8 cup grape molasses
1/3 cup water
1 tsp all purpose/bread flour
2 cups toasted sesame seeds
Place a baking stone at second lowest rack in the oven and preheat the oven to 460F°.
Mix the yeast, sugar and water. Leave for a few minutes for the yeast to activate. Mix the rest of ingredients with yeast mixture In a bowl of stand mixer with dough attachment. Mix well and knead until the dough keeps together well, 5-6 minutes. The dough should be smooth but not too much. Cover and set aside to rise for an hour.
Whisk the grape molasses, water and flour in a large bowl. Place the roasted sesame seed in a another large. If you don’t have roasted sesame seeds, toast them in a dry pan until golden, stirring them regularly, taking care not to burn any of the seeds. This only takes a few minutes.
Cut the dough into 7 equally sized pieces. Roll each piece into long sausage shapes. Let them rise about 15-20 minutes. Take one dough then roll and squeeze, give a snake shape to it. Please see my how to make reel at this point. Tie them up.
First, dip the simits into the molasses mixture until covered all over and then cover with sesame seeds. Place them on a piece of baking parchment. Let them rise again 10 minutes and bake for 15 minutes. If you don’t have a baking stone you can bake them on baking sheet, just they may take longer to bake.
