Roses bloom in shadow as the sun sets over the vineyard. 🌸 This is Falcon Box, the field blend of Burgundian Varieties at the entrance to the vineyard. It’s the closest parcel to the barn at the center of the farm and because of this the part of the vineyard where we spend the most time. 🍇 When we purchased the property this was planted to Tempranillo and we top worked the own-rooted vines to Pinot Noir, Meunier, Melon, Aligote, Chardonnay, Pinot Gris and Pinot Blanc. Two, 2-bud sticks were grafted to the trunk of each vine and because we mixed all the cuttings together there are often different colored grapes on each side of the plant. 🏔🦅 The growing and fermentation of mixed varieties forges a totally different identity for the wine than if they had been grown and vinified separately. Varietal character subsides and a sense of place emerges. One can always feel the essence of this cool, alpine, river, valley in the wine. It tastes more like a distant relative of wines made in the Savoie or Jura than Burgundy. 😴🌙 This wine always taken a very long time to ferment. The last time we released a vintage was the 2017 several years ago. Since then, we’ve been waiting for the wines from 18,19 and 20 to finish. I’ve always loved the complexity that emerges from whites that ferment at a glacial pace and the diverse group of microbes that inhabit our soils and cellar ensures that this is the case here.
