Birthday time! My baby turned 9 The request - a heart theme and the cake had to contain meringues. But apart from that anything goes. Heart shaped cake in five layers. Would have been better with five cake tins. Chose to make a chocolate sponge rather than an ombreฬ pink layer cake. The reason behind was two-fold. Firstly the colour and the flavour of the chocolate would offset beautifully against the pink hued buttercream. But I also didnโ€™t want to ice the outside. I wanted to dollops of piped icing in the layers to be visible. And chocolate cake just looks more uniform. I chose four different sizes and shaped nozzles for my buttercream and coloured them varying shades of pink and red. Warning you will go through vast amounts. The meringue cake in the form of heart shaped lollies. Again I made a big batch of meringue. Coloured it varying shades of pink. Then piped using different nozzles onto barking parchment using cake pop lolly sticks. These were then covered in sprinkles and baked for 45 mins. Gently the backing was peeled off (make sure to bake extra.
