A side dish of Rugosa Friulano Squash served during a feast. It’s cut thick, scored and griddled. Painted with crushed basil.
This dimpled crookneck squash is unlike any other. The texture is surreal and malleable. It melts into the most tantalizingly carmelized states. It will stay al dente for a long time. In this state it can behave almost like meat and is absolutely as satisfying as a steak.
Then somewhere deep into the cooking it will spontaneously melt into a yellow and utterly sumptuous purée. There’s really nothing like it.
