I need to give credit where credit is due I beleive I saw this from one of the @mob guys but correct me if I’m wrong, then @zenaskitchen did a beaut job of it too with kale, and ceasar salad being one of my faves I had to have a go. It’s super good I’ve had it twice for lunch this week! Do habe a go if you’re looking to batch up your lunch also can be use with shop bought dressing if you’re wanting something really quick, but obvs not as good! ENJOY!!! 💛💛💛 Serves 2 for dinner 3-4 lunch: Glug olive oil 1/2 pack diced chicken Salt Black pepps 2 slices of bread (I used @gailsbakery potato and rosemary aka the best one) 1 yolk 1/2 tbsp mustard 4 chunks of parm 1 garlic clove Salt Black pepps 3 anchovies Lemon zest 200 ml oil 50 ml cold water 1/2 lemon juice 1/4 pack cooked pasta 1 midget gem lettuce, sliced More shaved parm for garnish 1. Heat oil in pan and cook chicken with salt and pepps until browned and then add bread cubes and cook until crispy 2. Make the dressing add yolk, mustard, garlic, parmesan, salt, pepper, lemon zest, juice, oil and cold water and blend until thick. 3.
