Nothing better than a classic walnut chocolate chip cookie!!🥛 78 grams salted butter, cold and cut 1/4 inch dice 73 grams dark brown sugar 45 grams granulated sugar 1 egg 2 tsp vanilla extract 123 grams all purpose flour 3/4 tsp cornstarch 1/4 tsp baking soda 1/4 tsp baking powder 1/4 tsp salt 130 grams dark chocolate chips 90 grams toasted walnuts, roughly chopped 1. Preheat the oven to 350F, line a baking sheet with parchment paper. Whisk together the flour, baking soda, baking powder, and cornstarch, set aside 2. Using beaters or the paddle attachment on medium speed, cream the butter and sugars until fully combined and fluffy, about 2 minutes 3. Add the egg and vanilla extract, beat until combined about 30 seconds 4. Scrape down the sides and bottom of the bowl, make sure to get everything incorporated 5. Turn the mixer on low. Add the dry ingredients, mix until combined . Do not over-mix. Stir in the chocolate and walnuts 6. Divide the dough into 6 equal balls 7. Place 6 cookies on the baking sheet and bake for 14-16 minutes or until the edges are golden brown and the tops are just set. They will look underdone but will continue baking on the cookie sheet 8. Place a small bowl or round cookie cutter around the cookie and make a circular motion pushing the sides up (scoot the cookie) This will make the cookies extra thick and round.
