Pink Sauce is the new Red Sauce. We love making a pasta sauce out of secret vegetables, especially when they turn our pasta pink! For your own bright pink pasta, boil red beets with salt, pepper, and onion powder over medium heat & simmer until tender, about 20 mins. Reserve 1⁄3 cup of cooking liquid & strain beets; cool. To make your sauce, use a blender to combine beets with white balsamic vinegar & olive oil. Use that extra cooking liquid as needed to get the sauce consistency you want. Don't forget to garnish your pasta at the end. We love basil, pine nuts, burrata, and of course an extra drizzle of olive oil.
