Set the scene: You’re over at a friends and they pull THIS out of the oven.
The most main character Banana Bread ever made. Que the instant drool after getting a sniff of that sweet, sweet loaf.
Now you only have one thought in your head.
And that thought is screaming, “How the heck did you make this?”
Well, take your eyes off the Banana Bread for a quick sec and save this recipe (or you’ll probably be thinking about it for the rest of the day).
Batter:
- 1 cup maple syrup
- 1/2 cup coconut oil, melted
- 2 eggs
- 3 tablespoons milk or almond milk
- 2 teaspoons vanilla extract
- 2 cups Kodiak Cakes Buttermilk Power Cakes Flapjack and Waffle Mix
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 3 overripe bananas, mashed
Directions:
1. Preheat oven to 350
2. Grease a loaf pan + line the bottom with sliced ripe bananas
3. In a saucepan, add 3/4 cup granulated sugar and 2 tbsp water over medium-high heat. Cook until a caramel forms, roughly 6 minutes
4. Pour over the bananas in an even layer
5. In the bowl of a standing mixer, combine maple syrup, coconut oil, eggs, milk, and vanilla. Mix well.
6. Add in the Kodiak Cakes mix, baking soda, cinnamon and nutmeg, and mix until just combined. Mix in mashed bananas.
7. Pour batter into pan and bake for 35-40 minutes, or until an inserted knife comes out mostly clean.
8. Cool ten minutes and remove from pans. Bread may settle slightly.
9. Enjoy!
