Home-cooked dinners, whenever you want them? That's the beauty of batch cooking. We've asked @thebatchlady to suggest a few recipes that will feed a few, or leave you with leftovers to stash in the freezer. Start with this delicious Turkey, Chorizo and Butter Bean Stew. You'll need: 1 tbsp olive or vegetable oil 1 onion, diced 2 cloves garlic, crushed 150g chorizo, diced 2 x 400g tin chopped tomatoes 200ml chicken stock 400g tin butter beans, drained 2 big handfuls kale, washed 300g cooked turkey, cut into chunks 1. Add the oil to a deep sided frying pan on a medium heat. Add the diced onion and cook until soft. 2. Once soft, add the diced chorizo and garlic and cook for 5 more minutes. 3. Add the chopped tomatoes, chicken stock, butter beans and kale. Bring to the boil and then reduce the heat to a simmer and cook for 15 minutes stirring occasionally. 4. Once cooked, remove from the heat and leave to full cool. Once cooled, stir through your leftover turkey. This prevents it being reheated and means it is safe to freeze. 5. Once cooled, add to a large labelled freezer bag and freeze flat. When you're ready to eat, remove from the freezer and fully defrost. Once defrosted, add to a saucepan and reheat until piping hot.
