You haven’t had mochi this good before: To make, you’ll need the following: 1 cup mochiko glutinous rice flour 1/4 cup granulated sugar 1 tbsp Mojo Matcha powder 3/4 cup water Potato starch For the filling, we used matcha whipped cream and strawberry popping boba! For the Mochi, In a microwave safe bowl, mix together your Mochiko, sugar, and Mojo matcha before adding water. Once everything is mixed well, pour in water and mix again until loosely combined. Cover the bowl with plastic wrap and microwave for one minute, then remove and mix again. Do this 3-4 more times until the mochi has a translucent look and feels gummy. Let cool until you can handle it, and put on cutting board dusted in potato starch to avoid sticking. Shape the matcha mochi into a 1” high circle before using a knife to divide into 8 smaller sections. Ball each section up before using a rolling pin to flatten it to your desired size. Add your filling to the middle, and then wet the edges of the mochi before pinching it all together. Place the pinched edge side down on top of more potato starch and let sit for a while to smooth out.
