1ļøā£ METHOD
To make the cordial: 1kg Red Onion, 3 litres of water, 4kgs sugar, 20g Citric Acid, 700g Parmesan Cheese. Finely chop the onion and add 200ml of water and cook in a frying pan at low temperature, add 500g of sugar and stir until unified. Gradually add another 500g of sugar and keep stirring, don't let it boil. Once the mix is unified add 800ml of water. Let the mix cool and the rest of the water and the citric acid. Fine strain with a coffee filter until 50% of the red onion colour is extracted. Discard the onion pieces, let it cool and add the previously grated parmesan cheese. Let it rest for 24 hours and strain again. Keep it bottled and in a fridge for a maximum of 6 months.
