Here’s the deets on our mango fresh cream cake 👇🥭⁠ ⁠ Homemade cakes are so special bc they’re made with love 💘 I made this for Elijah’s bday - the layers are sponge cake, fresh mangos, and whipped cream 🎂⁠ ⁠ My bakers notes:⁠ -I was planning to make a yogurt fresh cream like paris baguette...but forgot to add yogurt 😅⁠ -the mangos were perfectly ripe! 🥭💦 They were almost ripe so I put them in a paper bag with bananas for one night. It worked!⁠ -I was in a rush so I quickly pulled up a fluffy sponge cake recipe on a major food publication. But it turned out neither fluffy nor spongy enough, which I could’ve found out by reading the reviews beforehand f 💀⁠ -I used calamansi juice instead of lemon and that flavor came out nicely 😍⁠ ⁠ ⁠ Sometimes I get too hard on myself about my baking but remember that there will always be wins/losses with baking. And despite it all it was still really enjoyable and worth eating. Elijah gave it 10/10 and loved it for his bday! 🥰⁠ ⁠ What cake flavor do you love to eat on your bday?
