Cranberry orange thumbprint cookies using @Cape Cod Select frozen cranberries! Makes 16 cookies Ingredients: 1 cup (2 sticks) unsalted butter, softened Zest of one large orange 2/3 cup granulated sugar 2 large egg yolks 2 teaspoons pure vanilla extract 1/2 teaspoon salt 2 cups all-purpose flour 1 Tablespoon cornstarch CRANBERRY JAM 1 1/2 cups Cape Cod Select frozen cranberries 1/2 cup granulated sugar 1/2 cup orange juice 1 tsp ground cinnamon 1. Make the jam first. Place all of the ingredients in a medium saucepan. 2. Bring to a boil, and then simmer for 10 minutes or until thickened and is a jam like consistency. Set aside to cool. 3. For the cookies, beat the orange zest and sugar until combined. 4. Add the butter, beat until fluffy, about 2 minutes. 5. Add the egg yolks and vanilla, beat until fully combined. 6. Mix together the flour, salt, and cornstarch, slowly add while mixing on low. Mix until combined and a dough forms 7. Using a medium cookie scoop, scoop out the dough, rolling it into balls. 8. Using the back of a teaspoon measuring spoon, make a deep indent into the center of the cookie. 9. Repeat until done, place the formed dough onto a cookie sheet into the freezer until frozen. 10. Once frozen, place 6 cookies on one cookie sheet at a time. Bake at 350F for 15 minutes. Let cool on the baking sheet. 11.
