Each color has its own benefits, and green appears to have the widest spectrum - say it with me, “leafy greens every day & a rainbow throughout the week!” PURPLE POWER SALAD Serves 4 4 c red leaf, butter, or gem lettuce 1 head radicchio 1 c red cabbage, shredded 1 large purple carrot, peeled & chopped 1/2 red onion, peeled & sliced 1 small head fennel, sliced thin 1 small red beet, peeled & sliced thin Red Wine-Turmeric Dressing: 1/4 c olive or avocado oil 1/4 c red wine vinegar (I 🧡 @acidleague Cabernet Port Living Vinegar) 1 t honey (I 🧡 @wedderspoonofficial Manuka honey - 10% off in my bio link) 1 tsp dijon mustard 1/2 tsp turmeric 1/4 tsp fresh ground black pepper (to activate the turmeric) Roasted Salmon: 1 lb wild-caught salmon, rinsed juice of 1 lemon drizzle avocado oil 1/4 tsp salt Place salmon in a heavy bottomed pan and season with lemon, oil, & salt. Roast at 400 for 15 minutes or until cooked through. Allow to cool slightly and remove skin with a sharp knife. Place on top of salad. Put all dressing ingredients in a bowl & whisk until combined.
