The mackerel. Butterflied and grilled; it sits over a hidden roasted garlic aioli. After coming off the grill we coat the fish in a mixture of fried garlic, smoked almonds, and rosemary. It’s a real nice mix of flavors and textures, and it’s really good. A lovely collaborative dish between my sous chef and I. Come and get it. Shot on film by @luuuuush #returnofthemack
