teriyaki salmon soba noodles I could genuinely have this every night and be content 🥹 serves 2: ingredients: 1x bunch soba noodles (90g) 2x salmon fillets (skin off and cubed) 1x bunch broccolini, roughly chopped 2x bunches of choy sum (Chinese leafy green) sesame seeds so serve TERIYAKI SAUCE INGREDIENTS (Makes to serve 2) 1 tablespoon sesame oil 1/4 cup tamari sauce or soy sauce 1/2 tablespoon Dijon mustard 2 tablespoons sesame seeds (white, black or a mix) 1/2 tsp minced ginger 1 tablespoon raw honey or maple syrup method: Preheat oven to 200°C Mix together all ingredients for teriyaki sauce and set aside. In a bowl, marinate the cubed salmon in half the teriyaki sauce. Let sit for a few mins before transferring salmon pieces to a lined baking tray. Place on tray and let cook in oven for approximately 25/30mins or until golden and brown. Cook soba noodles according to packet. Once soba noodles are cooked, rinse under cold running water to prevent them from sticking. Place vegetables in a pan with olive oil, cook until slightly crunchy. Add teriyaki sauce to the greens whilst cooking. Place the cooked noodles and vegetables in a bowl, top with salmon and top sesame seeds.
