Ingredients.
Risoni Salad:
150g risoni pasta
1⁄2 large zucchini
220g baby bocconcini
350g punnet of cherry tomatoes
Dressing:
2 tbsp balsamic glaze
1⁄4 C olive oil
1 tbsp fresh basil, finely chopped
2 tbsp maple syrup
Pinch of salt and pepper
1 tsp minced garlic
Method.
1. Bring a pot of water to boil and cook risoni according to packet instructions.
2. Prepare ingredients by dicing zucchini, rinsing, draining, and quartering bocconcini, and chopping cherry tomatoes in half.
3. Once risoni is cooked, drain, and rinse, and then mix in with zucchini, bocconcini and cherry tomatoes.
4. Prepare dressing by whisking together all ingredients. Drizzle on top of risoni salad and toss well.
5. Upon serving, garnish with salt, pepper, and fresh basil.
