My first cooking reel on this page! A perfect dinner for cold autumn nights.. vegan tomato soup & sourdough grilled cheese
Easily adaptable to be non vegan just swap out those ingredients 🫶🏼
You will need:
1 pack large vine tomatoes
1 red bell pepper
1/2 red onion
1 garlic bulb
Glug of Olive oil
Chilli flakes
Basil leaves
Vegan cream (I used elmlea)
2 slices Sourdough bread
Vegan cheese grated (I used Ilchester)
Vegan butter
Method:
- Roughly chop the tomatoes, pepper and onion and place into a roasting dish
- Add the garlic bulb, drizzle with olive oil and season with salt, pepper & chilli flakes
- Roast for 30 minutes
- Transfer into a saucer, squeeze 3-4 cloves of garlic from the bulb and add along with a splash of water, vegan cream (amount depending on preference) and some basil leaves
- Blend until smooth using a hand blender
For the grilled cheese
- Butter 2 slices of sourdough
- Add 1 slice to a hot pan butter side down and top with the cheese
- Layer on the second slice of bread butter side up and fry until both sides are crisp and the cheese is melted
