More than just a bunnings snag 🤌 Lamb, Rosemary & Honey meatballs on a bed of herby whipped cottage cheese topped with pickled red onion & dukkhah Serves 2 Time: <30 mins Level: easy INGREDIENTS ✨ 4 Lamb & rosemary sausages 2 tsp ground cumin 1 tbsp honey 1 zucchini, thinly peeled into ribbons 1 pack microwaveable brown rice & quinoa Whipped Herby Cottage Cheese ✨ 1 cup cottage cheese Zest of one lemon 1 tbsp olive oil 1 tbsp Greek yoghurt Handful of fresh mint leaves Handful of fresh dill 1 tbsp honey Pinch of salt and pepper TO GARNISH ✨ Fresh mint and dill Pomegranate arils Dukkah to garnish Handful of pickled red onion Method 👩🍳 1. Start off by preparing the meatballs. Carefully slice down the centre of the sausage to remove the meat from the casing. Add to a bowl along with crumbled fetta, honey and cumin and using your hands (lather in a little oil first so the meat doesn’t stick) mix to combine. Roll into small evenly sized balls. 2. Heat a tbsp of olive oil a non-stick pan over medium-high heat. Once heated, add meatballs and cook for about 8 minutes, turning regularly until cooked through and remove from pan. 3. To make the herby cottage cheese base, add all the ingredients to a NutriBullet or blender and blitz until combined. If it’s too thick and not mixing - add a tbsp of water to help. Don’t add too much as it will be too runny. If it does go runny, just add a little extra cottage cheese 😊 4. In a small mixing bowl, add brown rice and quinoa, zucchini ribbons and a tbsp of olive oil and toss to combine. 5. To assemble your masterpiece, lather the herby cottage cheese of each plate, top with the zucchini mixture and meatballs.
