roast pumpkin & greens frittata so healthy and easy! recipe below🫶🏽 ingredients: 1/2 large butternut pumpkin, diced and roasted 1 large leek, diced 2 large handfuls of kale, chopped finely 2 large handfuls of baby spinach 8 Eggs ( both white and yolks) Goats cheese for crumbling on-top Salt and pepper to taste Fresh basil to garnish method: Preheat oven to 180°C Cut pumpkin into small cubes and place on a lined baking tray with olive oil for approx 45 mins until golden and slightly crispy. Once roasted, set aside. Place diced leek into a hot fry pan with olive oil until it turns glossy and brown. Add in chopped kale, spinach. Sautéed until greens are wilted. Place cooked greens into a lined baking dish. Beat eggs in a bowl with salt and pepper and pour over the greens making sure it’s all even. Assemble roasted pumpkin over the top and crumble goats cheese. Finally add fresh basil. Put in oven and bake for 30-35mins or until looks ready. let cool, slice and serve. 🧡
