The secret is marinating your chicken in yogurt and spices before cooking. In our recipe for chicken tikka, we marinate and broil pieces of chicken tenderloins before building our sauce. But you can use a yogurt marinade to tenderize your chicken whether or not you're adding it to a sauce. In a large bowl, combine your spices and seasoning of choice, a cup of plain yogurt and add in whatever cuts of chicken you're working with. Let the chicken marinate for 1 hour in the fridge and remove excess marinade from your meat before broiling, sautéing, or grilling.
