Brown Rice, Radish, Apple & Almond Salad - Feeds about 6 as a side I love this salad because it’s dense & substantial but still refreshing and packs a mean crunch. Because there’s no wispy leaves, it sits very happily in a lunchbox without wilting for 2-3 days, so it’s a great one for meal prep. It’s also the time of the year to think about some easy, fresh sides for a Christmas lunch or dinner and this little number fits the bill, with the added bonus of being able to prep it a day ahead of the mayhem! Enjoy! SALAD 1/2 cup finely sliced spring onions 2 medium sticks celery, thinly sliced 1 medium pink lady apple, cut into matchsticks Handful of roasted almonds roughly chopped 1 heaped cup cooked @sunrice brown rice, cooled 1/3-1/2 cup finely grated parmesan cheese (optional) Handful of radishes, finely sliced 2 handfuls of picked mint leaves, roughly torn OR parsley DRESSING 1 small clove garlic, crushed 160g Greek style yoghurt Zest of 1/2 a lemon 1/3 cup fresh lemon juice OR to taste 1 Tbs honey OR to taste Salt & freshly cracked black pepper to taste To make the dressing, mix all the dressing ingredients in a bowl to combine. Taste to see if more honey or salt is needed. Pour over the salad ingredients in a large bowl and toss to combine. Best served chilled. #sunrice #ambassador #pohsricekitchen
