Basil Watermelon Granita Recipe: 750g Watermelon, cubed 75g Sugar Pinch of Salt 75g Water 2ea Limes, zest and juice 1 tsp Tahitian Select Pure Vanilla Extract of Papua New Guinea 10g Fresh Basil Directions: In a small pot, add sugar, salt and water. Bring to a simmer and mix until the sugar dissolves. Set aside to cool. In a blender, add watermelon pieces, simple syrup, lime zest and juice, vanilla extract and basil. Blend on high for 2-3mins until smooth. Strain through a sieve and add to a shallow baking pan. Place the pan in the freezer for about 30 minutes, or until the mixture begins to freeze around the edges. Using a fork, scrape the frozen portions to break them up. Return the pan to the freezer and repeat the scraping process every 30 minutes, until the mixture is fully frozen and scraped, resembling a slushy consistency.
