easy veggie tacos 🌮 ingredients: serves 2 4 corn tortillas red capsicum, sliced yellow capsicum, sliced eggplant, sliced zucchini, sliced 1 brown onion, sliced Olive oil 1 garlic clove 1 tsp paprika 1 tsp cumin pinch of chilli powder Salt & pepper optional: add cheese when assembling (I used goats cheese) and it was perfection. guacamole: avocado lime coriander salt & pepper Method: 1. Preheat oven to 180 2. Assemble all veggies besides onion and garlic on a lined baking tray, drizzle with olive oil and sprinkle with cumin, paprika, salt and pepper. 3. Let the veggies roast until soft and golden 4. Over a low heat, drizzle olive oil in a pan and green add minced garlic, onion and spices 5. Cook on low (the longer the better) until caramelised and softened, place aside 6. In a bowl mix guacamole ingredients together until creamy 7. Cook the tortillas on a gas stove or grill to heat up and plate 8. Add all the fillings and sprinkle with lime juice and coriander, enjoy!
