It’s National Ice Cream Pie Day and we’re not skipping this holiday! See how we whip up an easy chocolate ice cream pie and finish it with a luscious Salted Maple Meringue. Do you want a large or a small slice? 🍰🍴 Salted Maple Meringue Ingredients: 150g Water 160g White Sugar 80g Maple Sugar 100g Egg Whites, room temp 1/2 teas Ground Vanilla Beans of Madagascar 1/2 teas Salt 1 tbsp Maple Syrup, optional Directions: In a small pot over medium heat, bring water, sugar and maple sugar to a boil. Cook until it reaches 118C. In the bowl of a stand-up mixer, add egg whites. When the sugar reaches 115C, start the mixer on medium speed and begin whipping with whisk attachment. When egg whites are fluffy, turn the speed up slightly and carefully add the sugar to the mixer in a steady stream. Continue mixing on high speed for 3-4 minutes until the meringue is thick and glossy. Finally, add the ground vanilla beans, salt and maple syrup, and continue mixing to combine. Use the meringue to frost your ice cream pie as desired.
