Fromage Fri in France: La Jonchee, a made-yesterday-eat-asap-fresh-fresh-FRESH cow’s cheese local to Rochefort (NOT Roquefort, that’s 165 miles away). It’s method ancestral (ancient recipe basically) and comes wrapped in rushes picked from the local marshes and sewn and pressed by Eric Jaman - the last man to know how to do this left in the region.
