I know everyone’s pumpkin obsessed right now but I’m a biiiig choc pecan gal & these are my fave cookie bars everrrr ! 1 & 3/4 cups rolled oats 1/3 cup coconut oil 1/3 cup maple syrup 2 tbsp coconut sugar or monk fruit 1 tbsp water 1 tsp vanilla + pinch of sea salt 1/2 cup chopped pecans 2 tsp Cinnamon Chocolate chips (we measure these with our heart. I love @hukitchen choc chips! Discount in my bio 🤍) Preheat oven to 350f. In a large bowl, add the oats & pecans. In a small saucepan over medium heat, add the oil, sugars, & water. Let the mixture come to a bubble, stirring frequently. Let it bubble for a minute & remove from heat. Stir in the vanilla & sea salt. Pour over the oat mixture, mixing well. Pour the mixture into a lined 8x8 baking dish, pressing it down firmly. Sprinkle over the chocolate chips. Bake for 20-22 mins until golden. Let cool completely before cutting into bars.
