šBROWN BUTTER & GARLIC PUMPKIN GNOCCHIš
If you havenāt tried the pumpkin gnocchi yet, consider this your sign! Itās screaming to be paired with brown butter, garlic, and fresh herbs, which is exactly what I did here and let me tell you, itās complete HEAVEN. š¤¤Even my husband who is not the biggest pumpkin fan, loved it. INGREDIENTSā
One 14-oz package Pumpkin Gnocchi
5 tbsp salted butter
4-5 garlic cloves, chopped
4 sprigs fresh thyme
1 tbsp fresh parsley
2 cups spinach
Fresh grated Parmesan, for topping
INSTRUCTIONSā
Cook gnocchi according to package directions. Drain well.
In a large skillet, melt butter over low heat. Once butter starts to foam, add garlic, thyme, and parsley. Continue to stir until butter starts to brown and smell nutty. Immediately turn off heat and add gnocchi and spinach. Stir until gnocchi is well coated and spinach starts to wilt. Top with grated parm and salt & pepper, if desired.
