Looking for a soft, pillowy sugar cookie that’s perfect for an ice cream sandwich? A blend of ground vanilla beans, orange zest and cinnamon makes this the perfect canvas to your favorite ice cream flavor!
Soft Sugar Cookies
2 Sticks/226g Unsalted Butter, Softened
200g Sugar
1 teas Ground Vanilla Beans
1/2ea Orange Zest
1 Eggs + 1 Egg Yolk, Room Temp
300g Flour
2 teas Baking Powder
1/2 teas Salt
1 teas Cinnamon, Ground
Preheat oven to 350F
In the bowl of a stand mixer, add butter and sugar. Using the paddle attachment, cream for two minutes at medium speed. Add ground vanilla beans and orange zest. Mix again for 30 seconds. Add eggs one at a time and continue mixing. Stop the mixer and scrape the bottom of the bowl. Add your sifted dry ingredients and mix on low speed until all the flour is absorbed.
Using a medium ice cream scoop, scoop cookie dough onto a parchment lined baking tray. Rest in the refrigerator for 30 mins. Bake cookies for 10-12 minutes.
Let cool completely. Add a scoop of your favorite ice cream and sandwich another cookie on top. Wrap in plastic and reserve in the freezer until hardened. Share and enjoy!
