Sisi’s squash casserole deserves a permanent spot on my feed!🌟 Everyone in your family will love it, even kiddos! It’s been a family favorite of ours as long as I can remember and served often in our home. It’s also great for Thanksgiving! 🦃 Serve with your favorite meat and starch!🍽 Squash Casserole 5 medium to large squash (small are more tender if you can get them, just use more) 1 large sweet onion 1/2 stick butter 2 teaspoons salt 1 teaspoon pepper 2 teaspoons Everything But the Bagel seasoning 2 eggs, beaten 1 sleeve Ritz crackers 1/2 cup Heavy whipping cream 16 ounce block sharp cheddar cheese, shredded (you can buy shredded in the bag, but it tastes better to grate it fresh) Slice squash, chop the onion and transfer to a 3 quart saucepan. Add about 3 cups of water or enough to cover 1/3 of the bottom of the pan with ingredients. Add butter, salt, pepper and Everything But the Bagel seasoning. Cook on medium heat covered until the squash is fork tender. Drain and transfer to greased 9 x 13 baking dish. Add 2 beaten eggs, 1 sleeve of crushed Ritz crackers and add 1/2 of a small carton of heavy whipping cream. Mix well and top with 3/4 of a 16 ounce block of grated sharp cheddar cheese. Cover with aluminum foil and bake on 350° for 45 minutes. Take the foil off for the last 10 minutes and serve.
