Pork:â
- started by sweating some onions, garlic and dried chilis in a bit of oil in my @stargazercastiron before adding about 600g medium ground porkâ
- once the pork started to brown I added in lemongrass, Shaoxing wine, fish sauce, dark soy sauce, Chinese black vinegar, white pepperâ
- after the pork was cooked through I added in some julienned carrots and finely chopped green onions, only cooked for another 30 seconds as I wanted the carrots to remain crunchy.â
- after the heat was turned off I added the juice of 2 limes.â
- served in lettuce with a little bit of peanut sauce as well.â

Salad Rolls:â
Filled with shrimp, mint, bean sprouts, carrots, cucumber, green onion, vermicelli noodles, and crushed peanuts.â

Peanut Sauce:â
1/4 cup peanut butterâ
1 tbsp hoisinâ
2 tsp soy (dark soy)â
1 clove of garlic microplanedâ
1 tbsp Chili garlicâ
2 tsp vinegar (Chinese black vinegar)â
2 tbsp warm waterâ

Crush peanuts and more Chili garlic on top.â
