đź§„dressing: 2 garlic cloves, 1 tsp salt, 3-4 anchovies, 3 tbsp lemon juice, 1 egg yolk, 1.5 tsp dijon, 1/3 cup + 1 tbsp avocado oil, 4 tablespoons parm grated
mince garlic, salt & anchovies into a fineee paste, set aside. in a bowl mix egg yolk, lemon juice and dijon. stream the oil in verrrrrrrryyyyyyyyyyy slowly while whisking the mixture vigorously. keep going until the mixture looks thicc and glossy. add the parm and anchovy situation to the bowl along with salt and pepper to taste.
🍞sourdough croutons: tear bread into bite sized pieces toss with avocado oil until the bread is coated. if you don’t use enough oil they’ll be kinda whack. salt and pepper and grill until crispy crunchy and addicting. or bake at 375 in an oven. you’ll wanna make extra croutons for snacking they’re so good
🥬 cut 2-3 romaine heads in half lengthwise and grill on both sides until they’re just browned and beautiful
drizzle the dressing on the lettuce, sprinkle with croutons and repeat for layers of goooodness. eat immediately don’t make ahead!!
