This is now officially my family’s sickness soup of choice! 🍲 It’s so soothing and lovely 🥰 Recipe from @chefanthonybar 🤗 Ingredients: -2 tablespoons olive oil, divided -1 onion, diced -2 carrots, peeled and diced -2 celery ribs, diced -4 cloves garlic, minced -1 pound boneless, skinless chicken breast, cut into 1-inch chunks -Kosher salt and freshly ground black pepper, to taste -16 ounces cremini mushrooms, thinly sliced -1/2 teaspoon dried thyme -1 teaspoon turmeric -1/2 teaspoon dried oregano -8 cups chicken stock -2 bay leaves -1/2 cup uncooked orzo pasta -1 sprig fresh rosemary -1 bunch kale, stems removed and leaves chopped -1 (15-ounce) can cannellini beans, drained and rinsed -Juice of 1 lemon -2 tablespoons fresh parsley leaves, finely chopped Directions: -Heat olive oil in a large pot over medium-high heat. Add in onion, carrots, and celery and sauté until softened, about 5 minutes. -Add the chicken plus salt and pepper, and sauté for 5 minutes, until less pink. Add in garlic and stir until fragrant, about 1 minute. -Add in chicken stock, mushrooms, kale, herbs, lemon juice, and turmeric. Let simmer and cook for 25 minutes. -Add in orzo and cook 10 more minutes. Add in cannellini beans & mix in. Taste for seasoning and serve. Enjoy!
