It’s been an experience to document and witness the journey and success of @santiagolas and the team around him over the past few years. Ever since I first met Santi at his test kitchen in the outskirts of London in 2018 trying to impress investors and press with his cooking and charm, to the day he received the keys to his first restaurant, @kol.restaurant during the midst of the pandemic, and then just recently being awarded a Michelin Star and all the media buzz up to that - what a journey full of ups and downs it’s been. I’m happy to be a part of the story and can’t wait to see what the next chapter is both for Santi and all the amazing people around him that don’t get the limelight they deserve. I’ve made some close friends through this restaurant and I’m so grateful for that. 💛
