Noma will close its doors for regular service in Copenhagen at the end of next year.⁠ ⁠ René Redzepi, Noma’s founder and chef, said that despite guests paying $760 for food with a wine pairing, it was difficult to make ends meet and pay its almost 100 staff a fair wage. ⁠ ⁠ ‘We have to completely rethink the industry.
