Flapjack cookies✨
This amount will make 18 cookies - it’s a really versatile cookie recipe; you can add in additional ingredients if you’d like - dried fruit or dark chocolate would be ideal!
100g dates
100g raisins
1/4 tsp bicarbonate of soda
3 tbsp boiling water
150g butter
110g caster sugar
110g light brown sugar
1 Egg
1 tsp vanilla
150g plain flour
2 tsp cinnamon
300g oats
- Roughly chop the dates into small chunks and pop into a bowl, along with the boiling water & bicarb.
- Using a hand whisk, cream the butter and sugars until slightly pale. Add the egg & vanilla and mix again.
- Add the flour, cinnamon & oats and give it a really good mix. Lastly add the raisins, along with the dates (water and all!) and stir through to evenly distribute.
- Grab an ice cream scoop or weigh out 65g balls and place onto a lined baking tray around 2” apart. Squash them down slightly and bake in a preheated oven at 170°C (fan) for 10 minutes.
- Once cooled slightly you’ll be left with sticky, chewy flapjack cookies! These will keep in an airtight container for up to a week.
