This recipe’s special guest is matcha—she’s high in antioxidants that may help fight inflammation, reduce your risk for cancer + lower blood pressure and LDL cholesterol. 🤎 Matcha banana bread recipe for my fav leprechauns (or you can use your own recipe and just add 3 tbsp of matcha for festive baking): 2 overripe bananas 1/2 avocado 2 eggs 1 tsp vanilla extract 1/2 tsp almond extract (my obsession in baked goods) 1/3 cup honey 1/3 cup nut milk 1 1/4 cup GF flour 3/4 cup almond flour 3/4 tsp baking soda 1/4 tsp baking powder Pinch of sea salt 3 tbsp culinary grade matcha 🌱 Preheat the oven to 350° 🌞 Mix the wet and dry separately and then combine, pour in a bread tin lined with parchment paper. Add toppings that make your heart happy (choco chips and coco shreds for me) and bake for 40 min. Top should be golden and toothpick should come out dry when you poke the center—when it does, pull her out the oven and let her cool!
