A fusion of vibrant colours, flavours and textures in this quintessentially @ottolenghi dish from his @guardianfeast article last week.
Plump, juicy and almost macerated apricots that’ve been grilled and marinated in honey & lemon juice are tossed with fresh dill, mint, peas, walnuts & Aleppo chilli, before being generously spooned atop a creamy, zesty ricotta & goat’s cheese dip & finished with a drizzle of that sweet, sour and spicy marinade. 👌🏼
Scoop it onto some bread and make a refreshing meal of it in this not so refreshing weather. 😅
