first dinner in the new place 🦐 zarzuela de mariscos (ish) because look at those tomatoes!!! 1 red bell pepper diced 5 ripe juicy ass tomatoes diced 7 cloves garlic minced 1 onion diced 1/4 lb squid 1/4 lb shrimp 1/2 lb clams 1/2 lb mussels 3/4 cup prosciutto/pancetta/chorizo whichever diced 1/3 cup white wine 4 ish cups fish broth 2 tbsp tomato paste Pinch of saffron Smoked paprika, 3 bay leaves, rosemary, fresh parsley, a lemon toss the saffron in the wine while you sauté half of the prosciutto til golden. remove prosciutto and add 1/4 cup olive oil, the onion and peppers. saute until softened then add garlic and the spices/salt/pepper. cool down some more and deglaze with the wine for a few min. add the tomatoes + tomato paste. pour in the broth and simmer for 30min ish until everything looks nice and cozy. add clams and mussels until they’ve opened up (5-8ish min) then the shrimp (until pink, 2 min) sauté the squid separately for a few min with the other 1/2 of prosciutto just until cooked and slightly browned. once the rest of the seafood in the stew is done cooking, add the squid in, mix and remove from heat. scoop into a bowl, squeeze some lemon, add the parsley and eat with some crisppaay bread or rice or both !!
