How about a Tinned Mussel Bruschetta that will make you say “mamma mia”! 1. Toast bread in olive oil until golden brown. 2. In a bowl mix sliced fennel, parsley, halved cherry tomatoes and reserved tin sauce, and season with salt + pepper 3. Spread lemon aioli evenly on the toast (mixture of mayo, lemon juice and zest, and minced garlic) 4. Add the mussels evenly over the aioli smeared toast 5. Top mussels with veg salad 6.
