Baked rice with tomato & garlic confit.

One of my most cooked recipes from @ottolenghi’s book ‘Simple’, because the effort to impact payoff is too darn good.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
The bulk of the work is in peeling all the garlic cloves and shallots (well worth it), and after that, everything is pretty much tossed in a baking tray for the oven to do all the magic. Cherry tomatoes, fresh coriander, cinnamon, thyme, olive oil, basmati rice and water are the remaining suspects, getting all cosy in the oven while their flavours and aromas infuse each other.

The result is fluffy, perfectly cooked rice (great for those paralysed by the fear of mushy rice) that can be served as a side or frankly just enjoyed on its own. You’ll just keep helping yourself to spoonful after spoonful, I guarantee.
