A feast of a few of my favourite dishes of this season. Shot at @casamanamallorca during the @ora.collective retreat last month. Pic 1: The Feast! Pic 2: A bowl of pan-fried fennel cooked in garlic infused oil and garnished with beautiful wild garlic flowers. Pic 3: My favourite Queso Fresco de Cabra, locally made goat’s milk ricotta-style cheese topped with a pesto of fresh sweet fennel fronds, toasted hemp seeds and pumpkin seeds. Pic 4: Radicchio petals carrying black rice, bursts of citrus, a dusting of Dukkah and a rosemary-infused almond butter dressing.
