Replying to @jazzyofcourse Brown Butter Chocolate Chip Cookies with Homemade Toffee Inspired by @Travelandmunchies 1. Line a baking sheet with parchment paper. Melt 1/2 cup butter, 1/2 cup sugar, 1/4 tsp vanilla, and pinch of salt in a heavy bottomed pan until melted. Then raise heat slightly and stir constantly for 4-5 minutes until it’s the color of peanut butter. Then pour into baking sheet and let harden. 2. Meanwhile, melt 1 cup butter over medium heat, and let continue cooking until it bubbles up. Stir occasionally. Once you start to see little brown bits on the bottom and the butter starts to turn a golden color pour into a heat safe bowl and let sit for about 15 minutes. 3. Mix together. butter, 1 1/2 cups packed light brown sugar and 1/4 cup sugar. Then add 2 eggs and 1 tbsp vanilla. 4. Mix together 2 1/4 cups flour, 1 tsp baking soda, and 1/2 tsp salt and then add to wet ingredients. Mix just until incorporated. Break the toffee into little pieces and add in about 3/4 cup toffee and 3/4 cup chopped semisweet chocolate. 5. Chill dough for at least 2 hours (longer if you can), or overnight if possible. 6. Roll into cookie sized balls and top each one with a few pieces of toffee and chocolate. Bake at 350 for 10 minutes then top with a pinch of flakey salt.
