Sunday lunch done right with this party on a plate from @ixta.belfrage’s new book ‘Mezcla’. Can you really go wrong with so many amazing ingredients? There’s the aubergine, doused in olive oil and roasted alongside sweet cherry tomatoes and red chilli till soft and golden. And then there’s the salsa - finely chopped garlic, anchovies, basil, coriander, lemon juice & olive oil. Finish it off with some torn up buffalo mozarella and you have yourself the marriage of dreams!!
